Gingerbread bundt cake with cinnamon-rum icing By Mölle

gingerbread bundt cake with cinnamon-rum icing

ingredients
200 g salted butter
360 g flour
1 1/2 tsp baking soda
1/4 tsp salt
1 tbsp cinnamon
1 tbsp ground ginger
2 tsp ground cloves
1/2 tsp ground cardamom
4 eggs
360 g sugar
250 ml sour cream
150 ml applesauce

icing
180 g powdered sugar
2-3 tbsp milk
1 tbsp rum
1/4 tsp ground cinnamon
1/8 tsp ground cloves
1 tsp orange zest

instructions
1. Preheat the oven to 175°C (350°F). Grease a bundt pan with butter and dust with flour.
2. Melt the butter and set it aside to cool.
3. In a bowl, mix the flour, baking soda, salt, and spices.
4. In another bowl, beat the eggs and sugar until light and fluffy (about 2 minutes). Stir in the melted butter.
5. Gradually add the dry ingredients, sour cream, and applesauce to the egg mixture, starting and ending with the dry ingredients. Stir until smooth.
6. Pour the batter into the prepared pan and bake for 40-50 minutes on the lowest oven rack. Check with a cake tester. If it comes out clean, the cake is ready. If the cake gets too dark, cover it with foil.
7. Let the cake cool in the pan for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.

icing
In a medium bowl, combine all the icing ingredients and stir until smooth. Once the cake is cool, pour the icing over the cake.
